A cathedral ceiling follows the slope of the roof, so there is no attic to fill with deep material. All the R-value has to live inside the rafter bay, which is often only eight to ten inches deep.
Batts in that bay rarely fill it, and gaps around pot lights and beams let warm air climb to the roof boards. In winter, that air can leave frost and brown stains on the ceiling. Cathedral ceiling spray foam insulation fills the bay and seals it.
